The Glycemic Index measures the blood sugar response to eating the foods on the list. Values of 0-50 are low, 50-70 medium, 70-100 high. The Glycemic Load measures how much carbohydrate there is in the food to raise the blood sugar. Values of 0-10 are low, 10-20 medium, 20-30 high. You multiply the two figures together to get the total overall effect of the food on your blood sugar.
